Recreating Strawberry Panna Cotta Recipe with Lower Carbs🍓

Shared by DeniseM

I was trying to make Barbara’s Strawberry Panna Cotta recipe, but, with fewer carbs. I replaced the Erythritol in the recipe with some Stevia instead. I don’t know if I put too much or what happened, but it had a slight chemical taste I didn’t like. Back to the drawing board!

So I started over and I decided to make it similarly. I took about two cups of heavy cream (you could dilute this some with unsweetened almond milk) and placed it on a low simmer and I added a small box of strawberry jello. I used the Walmart brand of jello because it doesn’t contain maltodextrin. I stirred the cream and jello mixture until all the jello was dissolved and added a small splash of vanilla. I then poured the mixture into four small cups and chilled until firm for a few hours. Then before serving topped with some chopped strawberries and whipped cream, what a great dessert, thanks Barbara!🍓

The carb count would be about 7-8 carbs for the heavy cream and about 1-2 chopped strawberries, less carbs and calories if diluted with unsweetened almond milk. 🍓
