This makes a great appetizer or a side with a meal! They look like stuffed mushrooms, but are stuffed artichoke bottoms! Very yummy!
Stuffed Artichoke Appetizer
2 cans of artichoke bottoms drained. May need to level the bottoms slightly to sit level in the baking dish
1 block softened cream cheese
Chopped sun-dried tomatoes to taste (approximately 2/3 small jar)
Garlic Paste to taste (approx 1 Tablespoon)
Italian Seasoning to taste (approx 1 1/2 teaspoons)
Shredded Parmesan cheese to taste (approx 1/2 cup)
Mix well and use a small scooper to divide and scoop into each artichoke bottom
Bake at 400 degrees until slightly browned
Top with more shredded Parmesan and chopped basil
