These are my own recipes. You can easily adapt it to fit your taste.
Melt approximately 3-4 ounces of coconut oil. (I use a glass measuring cup and use it as my mixing bowl.)
To the coconut oil, add 1 1/2 tablespoons of sweetener (I use a Stevia/Erythritol blend.)
Next, add your flavoring: for chocolate, add 1 or 2 tablespoons of cocoa.
Stir until well mixed.
Taste to judge if more sweetener is needed.
Pour into a container with a lid for freezing. (I use a plasticware container.)
Add nuts if desired - The picture shows walnuts and finely shredded coconut.
Place in freezer until solid.
Remove from the freezer and cut into pieces.
Store in refrigerator or freezer.
You may wish to change the recipe - you could easily leave out the cocoa and use an extract such as peppermint - or you could add it to the chocolate.
Other extracts that go well with the cocoa are almond, vanilla, and orange. I think I can mix up a batch in about ten minutes. I did make one batch where I added butter to the coconut oil. When it was frozen, it formed a cloudy layer on top, but it still tasted great. I plan to try making it with just butter and no coconut oil.
