Want a healthier and tastier option for your nachos? Try using bell peppers as a base! They are super good for you and taste amazing! Red bell peppers have the most vitamin C, but green ones are good, too; they're just a bit bitter. If you want something sweet, go for the red ones! Mix it up and use a rainbow of colors for a tasty and vibrant snack!
First, cook your protein of choice - I usually cook hamburger or ground chuck and season it with my favorite spices.
After deciding which bell pepper(s) you want to use - cut them in half and remove the seeds and ribs.
Fill the pepper halves with the seasoned taco protein, top with cheddar cheese, and bake for about 7 minutes at 350 degrees. Remove from oven and top with guacamole, sour cream, and cilantro for garnish.
