I have the best neighbors on the face of the Earth! They do so much for me and I feel like one of the best ways to say thank you is through food. I had been making carby cookies, oh no, but decided to make something more healthy because the husband was concerned about his weight and I was a contributing factor! 😳 So I decided to bring him over from the carby dark side and make something more healthy and low carb, but still sweet and tasty.
I found this healthy snack mix recipe and thought it would be a good choice! I basically followed the recipe except I didn’t add peanuts, but used Deluxe Mixed Nuts for more variety. I switched the white chocolate chips to salted caramel chocolate chips (like those better) and milk chocolate chips by Lily’s (from Walmart) and I was trying to think of a way to lower the carbs some and I came up with the idea of adding some very low carb chocolate and peanut butter cereal by Schoolyard Snacks. I really like this cereal and have bought it for several years. It has good ingredients and only 5 carbs for the entire bag. I think it has fewer carbs than an equal amount of nuts so that will lower the carb count per serving and also add a nice crunch in the process!
I was tempted to add some Atkins M&M’s, they are a little on the carby side and contain Malitol, so I decided not to. They would have tasted great though. But this recipe is very adaptable to anything you would like to add, and it’s yummy sprinkled on top of yogurt or you can even add almond milk with a splash of cream if you like, and it makes a great cereal! 😊
I followed the recipe with just a couple of changes. You can definitely make it your own and change it up a bit! Put in snack-sized baggies to take on the go and for portion control.
I made this decorated jar with a thank you note, for my amazing neighbor, to hold the snack mix. I hope he likes it! I’m not sure if he even knows what keto is! Ha! Maybe???🤷♀️
I’ve only tried the Cocoa and Peanut Butter flavors of the Schoolyard Snacks cereal, but they have Fruity and Cinnamon Bun also and I bet those are great as well. Only 5 carbs for the whole bag and I find one bag is enough with the almond milk or half and half. 🥣
These are the dried strawberry slices. The whole bag is 30 carbs, but you might eat just one or two slices per serving, so I don’t think it’s a problem. It’s basically the same with any of the berries, just watch your quantity. 🍓
I used this dried coconut and I didn’t notice the recipe said to toast it. I didn’t do that. It might be better toasted, but it works fine untoasted also I think. The dried coconut is interesting. I don’t think it has that much of a coconut taste, more of just a nutty taste and it’s a tiny bit chewy. Toasting it might make it more crispy. 🥥
Here’s the snack mix sprinkled on yogurt and used as a cereal. It adds a nice crunch.😊
