Two Ways to Do Keto Texas Twinkies

There is a BBQ restaurant in the Dallas area that sells Texas Twinkies. I bought them several years ago when they were selling for $3 apiece, and I thought that was a horrendous high price! They now are $5 for ONE Texas Twinkie! I had to rectify that situation, so I started making my own version: Keto Texas Twinkies. They are simple but labor-intensive and worth it!

Buy the largest jalapeños you can find. You can cut them in half and then scoop out the ribs and seeds or slice the top off and scoop out the inside of the jalapeño.


To make the stuffing, I’ve used chopped brisket and pulled pork. I season a block of cream cheese with seasoning salt and garlic powder. Mix and fill the jalapeño and then wrap bacon around it. Next, baste each jalapeno with sugar-free BBQ sauce. I’ve baked them in the oven and used the grill. These are great for football season or any time!


But I was still thinking about the Twinkies and thought I would change them up. I used chorizo instead of brisket! See below how I did it!🌶️


Texas Twinkies 2.0


8 ounces softened cream cheese

1 1/2 cups shredded Parmesan Cheese

2 cups browned chorizo

About 20 large jalapeños

1 pound bacon

Seasoning salt and pepper

Sugarfree BBQ sauce

Core the jalapeños, remove seeds and ribs, and cut them in half. Then, mix cream cheese, parmesan cheese, and chorizo. Fill jalapeño halves with cream mixture, then wrap in halved bacon slices. Sprinkle with seasoning salt and pepper.


I used an air fryer, but a regular oven will work too! They cooked very quickly at 390 degrees. Before they are done, spread with the BBQ sauce and cook for another few minutes!🌶️
