I love Thai food, and these Thai Curry Meatballs turned out so good. I made them pretty much as was directed in the recipe, but I tend to add more garlic to just about everything. I love the fresh ginger in this and added more of that. I made some cauliflower rice and cooked it with a little chicken broth, butter, onion, cilantro, and lime. Here’s what my version looked like. I didn’t have an ice cream soup and made the meatballs a little smaller and I just cooked them in a skillet instead of baking in the oven.
