I saw the recipe for this casserole on Diners Drive-Ins and Dives a long time ago and have been making it ever since except now I do it completely keto! It wasn’t hard to adapt at all, just sub the cornstarch slurry with a little xanthan gum and top the casserole with keto bread crumbs, pork panko, or I have made fine onion strings by slicing an onion very thin, dipping it in egg, then pork panko then lightly fry. The recipe comes from a restaurant in New Orleans called The Old Coffeepot and they don’t give out the exact ingredients for this, but if you watch Diners Drive-ins and Dives Season 11 Episode 12 “Signature Twists” you can see it being made. So I just have to estimate and you really can’t go too wrong with whatever quantities you choose. This casserole beats the one with Campbell's soup all to heck and back!
This was the only photo I could find of this casserole it is so elusive! Not the best photo. It looks much better! It’s an old family recipe and apparently, they don’t want to give out too much. Here are the ingredients and instructions.
I watched the video and these are the quantities to the best of my ability.
1/3 stick of butter
1 small onion chopped
1 small green bell pepper chopped
1/2 can artichoke bottoms chopped
1-1/2 cups Cremini mushrooms chopped
A LOT of garlic chopped
1-1/2 cups sliced Cremini mushrooms
2 lbs. green beans ends cut
1 cup heavy cream with at least 36 % milk fat or higher
1 cup parmesan cheese
2 teaspoons xanthan gum
salt and pepper to taste
