I was contemplating what to have for lunch and looking at a couple of leftovers, and I just thought, UGH, I don’t want that. So I was thinking and thinking and came up with the idea of turning the leftovers into a chaffle!

One of my leftovers in question was the Jalapeño Popper Stuffed Chicken Breasts. I chopped the chicken breast up and added two eggs, finely shredded cheddar cheese, and seasoning salt.
I mixed that all up, then sprinkled just a tiny bit more cheese on the mini Dash, poured the mixture in, topped it with a bit more cheese for crispness, and shut the lid, hoping I didn’t ruin my chicken!

I let it cook for about five minutes until all the steam was gone. I opened the lid, and it looked pretty good! It looked like a regular chaffle, but it didn’t taste like a regular chaffle! It's pretty good, all fresh and crispy, and not just warmed-up leftovers.
You can change it up and add sauces like salsa or Buffalo sauce. Any cheese or seasoning you like. Add more veggies like onion, green onion, or bell pepper. I had mushrooms left over, so I just put those in there, too! This would make a great breakfast or tasty bread for an excellent sandwich. This would be good dipped in ranch or some buttery, sugar-free maple syrup.
Kind of like the Chicken and Waffles thing. Oh, maybe a spicy maple syrup! 🤷♀️ The possibilities are endless! 😃
