Our Theresa, here at Virtaworks, was telling me the other day how she made a frittata in the air fryer and all she did was line her air fryer with enough parchment paper to form a kind of bowl to put the egg mixture in, then cooked it and it came out great. That was my intention to do a nice flat frittata, WELL in my obsessive-compulsive need to overfill and over stuff, my nice thin frittata grew into a quiche I think! 😳 But whatever you want to call it, either a thin frittata or a thick quiche, it came out great in the air fryer! My oven hardly gets used anymore because I love the way the swirling hot air cooks things. Better, in my opinion, than a conventional oven. I think air just makes things better and they cook faster.
I used a greased silicone mold, but parchment paper, or glass, or metal will work. So for this quiche, you can put whatever proteins, veggies, and seasonings you like, but this is what I did.
Theresa’s Air Fryer Quiche
6 eggs
2 Tablespoons heavy cream
2 cups browned breakfast sausage (I like hot!)
6 small slices of deli ham cut into strips
2 large handfuls of fresh spinach
1/2 zucchini diced
2 mini red sweet peppers diced
2 mini yellow sweet peppers diced
2 mini orange sweet pepper diced
1 large jalapeño very small diced
3 green onions chopped
1 1/2 cups of cheese of choice, I used a Mexican blend
Seasoning Salt to taste
Pepper to taste
Mix all together and pour in whatever you are using to cook a quiche. I baked mine on the lowest setting for about 40 minutes. I’ve never cooked eggs in the air fryer before and was a little unsure. I just kept checking until a knife inserted came out clean.

This is what it looked like before baking. It was so full I thought it was going to overflow all over, but it didn’t. 🎉
