These are by far the best keto biscuits I have ever tasted. The photo is how they looked coming out of our oven last night. I toast half a biscuit and put my eggs on top for breakfast, and last night I used one as a hamburger bun. I encourage you to give them a try!
Ingredients:
2 cups shredded mozzarella cheese
2 tsp baking powder
3 eggs
1 (1 oz.) packet of dry Ranch dressing mix (NOT DRESSING)
1-1/2 cups almond flour
1/2 cup crumbled bacon
1 cup shredded sharp cheddar cheese
Instructions:
1. Preheat oven to 400°F.
2. In a microwave-safe bowl, microwave cream cheese and mozzarella cheese on HIGH for 1
minute. Stir until smooth.
3. Add baking powder, eggs, ranch mix, and almond flour to the cream cheese mixture. Stir well.
4. Stir in cheddar cheese and bacon. Stir until combined.
5. Spray a 9 x 13 baking pan with cooking spray. Divide the dough into 12 balls and place in
the dish. Place pan in the refrigerator for 10 minutes.
6. Remove the dish from the refrigerator and bake for 20 to 25 minutes. If desired, brush cooked biscuits with melted butter and sprinkle with dried parsley.
