Gail’s Keto Vegetable Soup

What a comforting delicious way to get all your veggies in!


Keto Vegetable Soup

  • 1 pound cooked ground beef

  • 1 pound Italian sausage

  • 3 or 4 strips of cooked bacon, chopped (optional) you can use real bacon bits if desired

  • 1/2 head of a large cabbage

  • 3 stalks of celery chopped

  • 1 large zucchini

  • 1 large yellow squash

  • 1 green pepper

  • 1 red bell pepper

  • 1 can of green beans or frozen green beans

  • 1 bag of frozen cauliflower or a small head of fresh cauliflower

  • Package of fresh mushrooms (sliced) or two small cans of mushrooms

  • Fresh spinach leaves (1/2 tub or a bag of frozen spinach)

  • Beef bouillon to taste

  • Vegetable bouillon (3 cubes)

  • Little sugar-free ketchup (or you can use a can of tomato bits)

  • Salt to taste

  • Pepper to taste

  • Garlic powder to taste

  • Seasoning salt to taste

After browning the ground beef and sausage, drain off the fat. Add the chopped bacon

and the remaining ingredients. Cook on medium heat until it comes to a boil. Turn the burner

down and cook on low until done.


It's a great Fall soup!
