A delicious treat with berries and cream cheese! Strawberry blintzes for breakfast today! The sun is out, the temps are in the low 40s and the 4 feet of of snow is melting, and it called for something fun and spring-like for breakfast.
Almost like IHOP! 🤗

3 Crepini egg/cauliflower wraps
2 oz cream cheese
1/3 cup cottage cheese
1 tbsp Powdered lakanto monkfruit
Dash of vanilla extract
1/3 cup strawberries, sliced
I warmed the cream and cottage cheese in a bowl, added the monkfruit and vanilla, and stirred well. I wanted it smooth, so I gave it a whirl in the NurtriBullet. I divided the filling into the three crepes, added sliced strawberries, rolled them in thirds, squeezed a little lemon juice, sprinkled a bit of monk fruit, and added a little filling on top and the remaining strawberries.
I popped it in the microwave for 20 seconds at 70% to warm.
