I saw this recipe by Shred Happens on Instagram and was very intrigued. Cottage Cheese Ice Cream, are you kidding me? I really liked all his other recipes, so I just had to try it because it looked really good and very much like smooth, creamy ice cream, not bumpy cottage cheese. I would say interesting is an excellent word to describe this ice cream. Certainly not bad, but I probably won’t make it again. BUT if I did I would add more sweetener (I used Allulose and Stevia) and some vanilla would be good too I think. I would say, if you’re very adventurous, try this and see what you think!
My mom was so anxious to try it that she made me rush it a bit. It needed to freeze a little longer than 3 hours. She asked for seconds, which actually says a lot, but my son didn’t like it.
I garnished it with chopped strawberries and almonds, which added a lot.
