Keto Zucchini Mushroom Rollups

These were SO good! I think I could eat these yummy lasagna-like rollups every day! They make a great side dish. I used them to go with Salmon with Garlic Herb Sauce.





Zucchini Mushroom Rollups


2 Large Zucchini


Cheese Filling:


2 Cups Ricotta

1/2 Cup Parmesan Cheese

1 teaspoon Powdered Garlic

1/2 teaspoon Seasoning Salt

1 beaten Egg


Mushroom Filling:


3 Tablespoons Butter

2 Cups Chopped Baby Bella Mushrooms

2 Tablespoons Minced Garlic

1 Small Chopped Onion

1 teaspoon Italian Seasoning

1/2 teaspoon Seasoning Salt

1/4 teaspoon Red Chili Flakes

Fresh Spinach-I just reach in and grab about 4-5 handfuls from the package!

Cheese Layer:


1 1/2 Cups Shredded Mozzarella


Topping:

1 cup Rao’s Marinara Sauce or other Low Carb Sauce.

1 Cup Shredded Mozzarella

Freshly Chopped Parsley


Begin by slicing the Zucchini with a Carrot Peeler. Try to place some pressure to get slightly thicker slices or you could use a knife if you can get the sliced thin enough. You want the slices to still bend and be able to roll up.


Lay the slices on a cookie sheet lined with paper towels and sprinkle with salt. Let sit for several minutes to release any moisture and blot dry.

Make the Cheese Filling and set aside.

Place Butter in a skillet and add Chopped Onion. Cook until tender then add Minced Garlic. Add Chopped Mushrooms and cook until all moisture has been reduced. Add Seasonings and Spinach and cook for a couple more minutes until the spinach is cooked.

Lay three slices of Zucchini overlapping them. Spread with about two Tablespoons of Cheese Filling, Top with some shredded Mozzarella. Then top with another two Tablespoons of Mushroom Filling. Starting at one end, Roll up as tightly as possible and place in a baking dish with 1/2 cup of Rao’s spread on the bottom. Continue making as many rollups as you can and place them in the baking dish.


Top with the remaining 1 cup of Rao’s, sprinkle with the Mozzarella Cheese and cover with foil. I used an air fryer, but you can use a regular oven at 350 degrees for about 20 minutes. Remove foil and cook until Mozzarella is slightly browned, take from oven and top with the Chopped Parsley.
