Keto Zucchini Roll Ups

I saw this great recipe on Instagram by Kitchenachim. He has some yummy recipes that are always in German, so a little translation is needed, but that’s OK.😊 I thought these Zucchini Roll-Ups looked delicious. It’s hard to resist a good roll-up! It's very simple to make. It helps if you have a mandolin to make the slicing easier. I sliced the zucchini, yellow squash, and cheese on it. Use the safety glove! These roll-ups were delicious. I subbed the bread crumbs with pork panko. I used baked ham and smoked Gouda. I ran out of the Gouda and finished with some Havarti. Any cheese you like will work. I baked them in the air fryer at 350 degrees for about 20 minutes. These make such a nice side dish to use for company, too! 🧀 Mine weren’t quite as pretty as his and I'm not sure why.🤷‍♀️ But very good! 👍🏼

Here is an inexpensive mandolin that makes slicing so much easier! Don’t forget to wear the protective glove, which is included!
